Lazy Sunday Recipe

I love Sundays! The morning usually starts with yummy pancakes I make with the help of Diem,  then its off to church we go. The rest of the day is typically naps, and light household cleaning. Sunday’s are a day for me to relax from the busy week, and usually a long Saturday before because of photographing a wedding.

This last year my Mother-In-law bought me a slow-cooker book. I have tried a few recipes here and there, but never thought anything about it… But today I tried Taco Soup. It was SO easy, which is awesome for me on Sunday afternoons. I’m excited for you guys to try this and let me know what you think!

My Final Verdict: Yummy! Perfect dish for the not so warm weather outside. With a little cheese and some Sour Cream, this was the perfect Sunday evening dish!

The Ingredients:

1 Pound of turkey or beef, browned and drained.

1 Chopped Onion

2 cans of kidney beans, drained and rinsed

2 cans of pinto beans, drained and rinsed

2 cans of corn, undrained

1 large can of diced tomatoes, undrained

1 can of Rotel, undrained

1 Packet of Taco Seasoning

1 Packet of Ranch Dressing Mix

Sour Cream and Shredded Cheese to your liking

The Directions:

brown meat if you are going to use it, drain fat and add to crockpot stoneware insert (the meat. not the fat.). sprinkle seasoning packets on top of meat. drain and rinse the beans and add. add the ENTIRE contents of the corn and tomato cans. STIR.

cover and cook on low for 8-10 hours or on high for 4-5. I think the longer you cook soup, the better, so if you have the time, opt for cooking on low. Stir well, and serve with a handful of shredded cheese and a dollop of sour cream.
